Ingredients
6 dry New Mexico chiles 6 dry California chiles 6 dry Pasillas chiles 6 tomatillos or green tomatoes boiled until soft 2 garlic cloves 3 C chicken broth 1/4 t cumin 1/2 t pepper 1 t salt 1 round of Mexican chocolate chopped

Instructions
Remove stems and seeds, then rinse chiles. Place chiles in medium pot with enough boiling water to cover chiles. Boil for 15 minutes. Using food processor, puree chiles with 1 to 2 cups chile water. Strain chiles through a sift and into a pot. Food process tomatillos and garlic cloves. Add tomatillos, cumin, salt, pepper and chicken broth to chile mixture and mix well. Add Mexican chocolate. Place leftover turkey meat or pieces of turkey in mixture. Simmer for 30 minutes. Serve with rice and warm tortillas. Garnish with Mexican style cheese. Note: Thicken chile using 3 Tbsp toasted sesame seeds and 2 slices of toasted bread. Combine in food processor until powdery in texture. Add to chile mixture by the Tbsp to thicken to your taste.
