Fresh Salad Greens with Pomegranate Vinaigrette

Ingredients
8 C fresh salad greens 1/3 C dried cranberries, soaked in hot water 10 minutes to plump, drain 1/3 C pomegranate seeds 1/4 C chopped fresh basil leaves 1/3 C slivered almonds, toasted 4 small Persian cucumbers, washed and thinly sliced 3 oz feta cheese, crumbled2 T sherry vinegar 2 T pomegranate juice 1 t honey 1 T minced fresh basil 1/4 t salt 1/8 t fresh ground black pepper 6 T good quality light tasting olive oil

Instructions
Stir together sherry vinegar, pomegranate juice, honey, basil, salt and pepper. Add olive oil. Refrigerate until ready to use.In a large salad bowl, combine the greens, cranberries, pomegranate seeds, basil, almonds and cucumbers. Toss lightly in vinaigrette. Divide salad among plates. Top with feta. Serve with additional vinaigrette.

Yummy Turkey Salad

Ingredients
4 C turkey meat cubed 1 C walnuts, toasted and chopped 1 C golden raisins 1 1/2 C celery, cut in 1/8" size 1 apple chopped 1 C mayonnaise 2 t lemon juice 1 1/2 t salt or to taste 1/4 t pepper or to taste 1 t savory thyme, chopped Chives, finely chopped and sprinkled on top

Instructions
Place chopped turkey, walnuts, raisins, celery and apples in a bowl. Mix well. In a separate bowl, combine lemon juice, mayonnaise, salt, pepper and thyme; add to turkey mixture. Chill until ready to serve.Serve on bread or on radicchio/lettuce leaf.
