Game Day Turkey Noodle Soup

Ingredients
1 Shelton's turkey carcass, with generous meat left on bones
Water to cover
Additional turkey, if needed to total 2 cups
6 chicken bouillon cubes
1/8 t pepper
4 carrots, sliced
2 stalks celery, sliced
1 onion, cut in large wedges
6 oz uncooked wide egg noodles
Instructions
In a large pot, place turkey carcass with enough water to cover. Heat to boiling and boil until bones are clean, approximately 2-3 hours. Add additional water if needed to keep carcass covered.

Remove carcass from water, scraping all remaining meat from bones. Dispose of carcass. Strain remaining liquid from pot, carefully removing any small bones that may have separated during the boil. Remove any skin or cartilage (gristle) from meat remaining in strainer.

Return both the meat and the liquid to the pot. If there is not at least two cups of meat, add additional leftover turkey to makeup the difference. Add chicken bouillon and pepper. Add carrots, celery and onions. Return to low boil until carrots are tender. Add noodles and boil for 7 minutes.

Serve or store in thermos container for a warm meal during the game!

Mexican Meatball Soup

Ingredients
2 T olive oil
1 large onion
8 oz (1/2 bag) petite peeled carrots
1 lb (1/2 bag) petite golden potatoes
5 stalks of celery
1 quart chicken broth
1 quart beef broth
1 - 14.5 oz Muir Glen Organic Fire Roasted Tomatoes
10 oz box of Shelton's Turkey Meatballs
2-3 t chili powder
1 t oregano
salt to taste (preferably Himalia Pink Salt with arbol chili)
Instructions
Cut all vegetables into 1" cubes. Saute onion for two minutes. Add remaining vegetables and turkey meatballs; saute for 4-6 minutes. Add chicken and beef broth; stir well. Add tomatoes, chili powder and oregano; stir well.

Bring to a slow simmer, turn heat to low and cook for 1 to 3 hours, uncovered. Taste and season with salt as needed.

Tips: The potatoes will thicken the soup the longer you cook it (if desired). You can cut the simmering time of the soup down to 20-30 minutes by sauteing the vegetables and meatballs for 15 minutes; or until vegetables are cooked through. Good for quick weekday meals!

Fiesta Soup

Ingredients
6 C homemade turkey stock
2 C leftover turkey
4 cloves garlic, diced
1 - 15 oz canned corn
1 - 15 oz can black beans, drained
1 - 4 oz can green chilies
1 T ground chipolte chili
1 t chili powder
1 t salt
1/4 C sliced black olive
1 T masa harina

Sour Cream Mixture
1/2 C sour cream
2 T chopped cilantro
2 T chopped avocado
1 t lime juice

Instructions
Put everything expect the masa hirana and sour cream mixture together and heat. Add masa harina to 2 T hot soup, mix; then return to soup.

Serve in a bowl over crushed nacho chips. Top with sour cream mixture.
